Ayatana

Ayatana provides a multisensory fine dining experience combining the authentic Thai flavours with the finest Japanese traditions. Helmed by acclaimed chefs Duangporn ‘Bo’ Songvisava and Dylan Jones – who earned a Michelin star for their previous Bangkok restaurant Bo.lan – the restaurant takes guests on a culinary voyage inspired by the Shojin Ryori philosophy with its connection to seasonal ingredients and sustainability.

Ayatana’s dishes are infused with sustainability. In order to guarantee farm-to table freshness, Ayatana uses herbs and vegetables from the farming village of Ohara. Ayatana invites guests to visit Ohara, where they can harvest these ingredients for dinner.

Koyo

At Koyo – open for lunch and dinner – the artistry of Japanese cuisine is on full show with talented chefs headed by the esteemed Chef Kondo meticulously crafting sublime dishes right in front of guests in Chef’s Table fashion. The omakase is the main focus, although there is an a la cart menu. Each dish is a testament of the chef’s culinary skills and creativity.

Koyo means ‘autumn leaves’ in Japanese, and the restaurant embodies the essence of its name. It uses fresh seasonal produce and special ingredients from the Kansai area, with the chefs sharing their stories as they prepare each delicious dish. A bespoke ‘Omakase Wine Pairing’ option is available featuring sommelier-selected wines, as is tea pairing with the teppanyaki.

Koyo offers three exclusive private rooms for the Chef’s Table. These rooms offer privacy and luxury to six to eight guests.

Kati

Kati is open for breakfast, lunch, and dinner. It focuses on using fresh, sustainably-sourced ingredients to showcase traditional Thai and Japanese flavors. The regional dishes, as well as the eclectic array of culinary delights available, are sure to satisfy your taste buds.

The Gallery

Known as ‘chanoyu’ or ‘sado’ in Japanese, the tea ceremony is a highly ritualised way of preparing and serving matcha (green tea).
